Wine Making with Invert Sugar


The more formal name for table sugar is sucrose. We do not often think of sugar making as part of the wine making process but you can speed up fermentation, and reduce the possibility of crystallization, by converting sucrose into its two component parts - glucose and fructose - before adding it to the wine must. Inverting the sugar speeds fermentation because it is the glucose and fructose molecules that the wine yeast will eventually turn into the alcohol and carbon dioxide produced in the fermentation process.

Commercial invert sugar is made with an enzyme called invertase. You can buy commercially produced invert sugar from brewing and winemaking supply houses, but it is considerably more expensive than grocery store table sugar. Partially inverted sugar can be home made from common table sugar without enzymes. The invert sugar recipe below uses lemon juice but you can substitute citric acid, ascorbic acid, or cream of tartar depending on what you have at hand at the time.

Invert sugar is made by mixing two parts table sugar to one part water, and adding two teaspoons lemon juice per pound of sugar. The mixture is brought almost to a boil and then reduced to a vigorous simmer for about 30 minutes. There should be no residual sourness from the lemon juice by that time. Pour the invert sugar syrup into a sealable jar, and refrigerate until cool. You can make a large batch and use it for several wine making sessions.

Invert sugar is used for fermentation only. Do not use invert sugar to sweeten a finished wine as it may restart fermentation. Unless you are making champagne, bottle fermentation seldom has a good outcome.

How To Select A Fine Wine


Fine wines are what romance is made of. They?ve been sung about, written about, waxed eloquent about. Although the choice of a particular type, year and quality of wine changes from person to person, there are some guidelines that help reach an agreement, in conformity with the price.

With the development of vineyards and wine-related sites all over, it is easy to buy any kind of wine anywhere in the world. A person in California or Caracas can today buy a New Zealand syrah as easily as anyone in Auckland even if they local wine merchant does not stock it.

When it comes to pairing wine with food the question is which one? A full red or a light white? Madeira is too heavy for some whereas a German Riesling is too dry. The most easily available wines are to be had soon after purchase. However those who would like to taste the best must know that patience eventually does pay. The Cabaret Sauvignon would be a better choice than a Pinot Noir for those willing to let the wine age.

Those who like a young wine with a bit more acidity would definitely enjoy a cool climate Chardonnay, such as those from Canada. However the nutty honeyed character is also appreciated by some who want to experience the flavor which comes with aging.

Categorical descriptions can be very useful. The Class 1 wines, also called ?Light Wine? or Red Table Wine have an alcohol content of about 7 to 14% by volume whereas Class 7 in comparison has an alcohol capacity of not less than 15% by volume. Flavored herbs and brandy are blended into the latter. If they have higher concentrations, they are labeled ?fortified?.

Sulfur is frequently added in the process of winemaking to avoid the growth of certain unwanted organisms. So remember to look for the sulfites on the label as sometimes it could be a bit too much for a person?s tastes. There are people who are allergic to sulfites too and sometimes don?t know it so they could be prone to unpleasant reactions. At times sulfur dioxide is used as a spray on the grape in order to avoid pests and this could leach into the skin. One must therefore check on the label for a confirmation of the amount of sulfites. Most are fine with the concentrations being below 10 parts per million.

During the process of wine testing, cool the wine to the correct room temperature i.e. about 52?F for whites and 65?F for reds. Use a thin rimmed glass and ensure that it is free of dust. Washing and carefully drying the glass with a lint free cloth can do this. Fill no more than 1/3 of a glass that should be held by the stem so as to avoid fingerprints and keep the glass from warming up. Check for a clear color by looking against a white background. A Pinot Noir would generally have the glow of a ruby. A Cabaret Sauvignon would be more violet. The ones made from grapes grown during hot summer and dry fall will show a darker color whereas those from a cool summer or a fall that?s had rain will be much lighter. Now gently swirl, sniff, savor the taste and enjoy.

Melbourne and the Yarra Valley Wine Tour: A Traveler's Guide to Victoria


A few weeks ago, I had a month-long vacation in Australia, mostly in Melbourne. It was my third trip to this city and the best one yet. It seems like every time I visit Melbourne, I always discover something new and this time, it was the excellent wineries in the area. I was virtually raving to my friends about all the fine wines I had tasted on my visit. Hence, at their urging, I am writing this traveler's guide to Melbourne, with a special eye on its delightful wine.

Firstly, on any visit to Melbourne, I strongly suggest that first-time visitors take a day or two to explore this magnificent city. Among all of Australia's major cities, this is the one that will likely have that special attraction to even the most jaded, well-traveled and world-weary tourist. As the locals say, Melbourne can mean different things to different people. It may seem foreign at first but there is always something that is strangely familiar and which, on some level, reminds the globe-trotting visitor of home. I guess that's why they call Melbourne a chameleon city.

Melbourne is a city of diverse cultures and remarkable contrasts. Here, different groups have learned to co-exist comfortably with one another. For instance, the Italian neighborhood and the Chinese neighborhood, which are side by side.

Whether your lifestyle is beachside or bohemian, Melbourne has something that will appeal to you, be it the food, wine, art, style, customs, nightlife, businesses or beliefs.

Once you're ready to start your wine tour, the place to begin is the Yarra Valley, a prime wine-growing district that began making wine in the late 19th century. Its cool climate and rich soil are ideal for producing dry red wine, chardonnays and pinot noirs. Among the excellent small wineries are Yeringberg, Yarra Yering, St. Hubert's, Seville Estate and Coldstream Hills.

Sample the offerings of wineries such as de Bortoli, Yarra Yering and Domaine Chandon (sparkling wines). You can have lunch at one of the wineries and spend the night in the area where there are a number of first-class hotels with luxurious accommodations.

On your second day, begin with a hefty breakfast (Yarra Valley offers the popular option of having breakfast on a hot air balloon as you cruise the sky, interested?) before heading to Healesville Sanctuary to view the indigenous koalas, kangaroos, wallabies and platypus. A little way further will take you to the Mornington Peninsula and its 30 wineries. There are excellent accommodations in the area for an overnight stay.

On your third day, have breakfast and taste the wine at Karina Vineyard then head to Dromana Estate for lunch and more wine tasting. The combination of the sea, cool climate and the area's excellent volcanic soil all contribute to the production of exquisite chardonnay and pinot noir. Spend the night in the vicinity.

On your fourth day, with your wine tasting tour over, you may want to ride the ferry to Queenscliff for a tour of the Great Ocean Road before heading back to Melbourne.
